Here is a simple recipe for roasted carrot soup!
This is one of my favorite soups for this fall season. If you know me, you know that I love to eat for the doshas and also for the seasons. This is so important for our overall wellbeing and health as we are feeding our souls along with our bodies.
This warming soup is very simple, and so nourishing!
What you will need…
3 pounds of carrot peeled
1 medium yellow onion
1 tablespoon of garlic, or 3 garlic cloves
1 tsp fresh ginger
4 cups chicken broth
Salt and pepper to taste
Olive oil
1/2 cup heavy cream
1/2 cup milk
Directions…
Start by peeling first layer of skin from your carrots, chopping your onions and placing them on a cookie sheet coated in olive oil. Drizzle more olive oil, salt and pepper on carrots and place in the oven at 425 degrees for 45 minutes or until completely soft and roasted to your liking.
After finished roasting, place garlic, chicken broth, ginger, salt and pepper to a blender. After the carrots and onions cool for about 10 minutes, also place in the blender.
After purèd, place in a pot on the stove and mix in heavy cream and milk. Let your soup warm, and serve!
Eat with homemade bread of choice, grilled cheese, salad, or roasted beets.
