I just made the MOST DELICIOUS dinner!
This tzatziki hummus mediterranean bowl is seriously so good, and actually quite simple!
Here is what you will need!
2 chicken breasts
1 cucumber
Red onion about 1/4
Garbanzo beans (for hummus) ➡️ lemon, garlic, olive oil, I threw in a few bell peppers
Baby tomatoes
Garlic
Dill weed
Parsley
Salt and pepper
Quinoa
Spinach
Cauliflower
Greek yogurt (plain)
Feta Cheese
First I started off with chopping up my cauliflower.
Preheat the oven to 425 degrees.
Line a cookie sheet with tin foil and place chopped cauliflower on the pan. Drizzle with olive oil, salt, pepper, dill, and garlic.
Place in the oven and let roast for about 20 minutes. I would frequently check on the cauliflower in the oven by continuously moving with a spoon.
Next, drizzle a cast iron or medium pan in olive oil, warming on medium heat for about 3 minutes.
Place your chicken in the pan and season with dill, garlic, parsley, salt, and pepper.
Let sear for about 10 minutes on each side, medium low heat so it doesn’t cook too fast.
Next, let’s make the tzatziki and hummus.
For the tzatziki, you will need about 1/4 cucumber, and 2 tbs. chopped red onion. Place one cup of greek yogurt in small bowl or dish. Add the cucumber and onion, then add a pinch of dill, salt, pepper, and garlic powder. EASY! Let store in the fridge to get cool for the meal.
For the hummus, I took one 15 ounce can of garbanzo beans and drained majority of the juice and poured the rest in the blender with the garbanzo beans. Add about 1 tbs lemon juice, 2 tsp. olive oil, minced or fresh garlic, about 2 tsps or two cloves, pinch of salt and pepper, and then I added two mini sweet bell peppers for extra flavor! Blend and again store in the fridge to get cool.
Next, you will place one cup of quinoa in a small sauce pan with two cups of water and a pinch of salt. Bring to a bowl then reduce to simmer and cover for about 15 minutes or until water is absorbed.
About this time, the cauliflower should be finished so remove that from the oven, and continue flipping the chicken until it is seared on each side!
The last thing you will need to do is chop up some tomatoes, cucumbers, feta, and onions as a garnish for the bowl. Cut as much as you will need for the known servings of bowls! I placed all of these ingredients in a bowl with a lid and shook it up so that it was all mixed together, almost like another salad.
For the chicken, I wanted it shredded to I placed it in my kitchen-aid and shredded the chicken so it got nice and shredded, otherwise you can wait until it cools and shred it by hand.
Assemble your bowl with spinach, quinoa, a scoop of roasted cauliflower, chicken, hummus, tzatziki, and vegetable garnish! So simple but so flavorful!
